250 g. (1/2 lb) cooked cod fish meat
1 large potato peeled and cut into small pieces
1/2 cup dried or fresh parsley, thyme, basil herbs, smoked paprika
1/4 teaspoon of garlic powder
1 egg whisked
1/3 cup of flour
1/2 teaspoon of baking powder
salt and ground black pepper
lemon
olive oil for frying
Instructions
Peel and cut the potato in small pieces to cook faster. Boil them in a little water until soft. Drain the water off once they are cooked. Leave them in the warm pot to steam and keep warm. They must not have extra liquid with them. Mash them well while warm.
For the cod fish meat, grind them in a blender or food processor to finely shredded. In a large bowl add the mashed potato and the shredded fish meat. Adding the herbs and garlic and the flour. Mix well until all combined well.
Once the mixture of ingredients is cool then add your whisked egg and baking powder, salt and black pepper.
Taste to see if you have enough of the spices. Place the mixture in the fridge to cool for about 20 minutes. This can be made ahead and kept overnight overnight covered and kept in the fridge.
To cook the cod fritters, heat up some oil in a pan that is deep enough to fry in. About 2 inches.
Measure about a tablespoon of the fish mixture and roll into balls. Place these on your boards until they all formed.
Preheat the oven to keep them warm for serving. At 110 Deg. C (225 Deg. F)
Now start frying the balls of cod for fritters or fish cakes. Fry for about 3-4 minutes each until nice and brown. Turning them around to brown equally.
Have a piece of wax paper on a sheet pan under the racks in the oven to collect any oil drippings. Place the fritters on the racks to keep warm while you complete the frying of the fish cakes or fritters.
To serve warm with some salad for a healthy lunch idea or any other sides you prefer.
They are very tasty eaten cold the next day as well.
