What is the secret to making good fudge?

If you cook it at a high temperature the fudge will come out very hard. Also mix until it comes to a boil then leave it and take it off and pour into a greased pan.
Should you stir fudge while it’s boiling?

Mix only until it comes to the boil. But if you using milk then stirring will keep the mixture from curdling. But once it reaches about 236–238 degrees F/113–114 degrees C do not stir anymore. Using condensed milk would be different and only stir until it starts to boil.
Do you cover fudge while it sets?
