Using 2-3 eggs per omelet, for one person is a large omelet. Also use a warm greased or non stick pan. Make sure you whisk the eggs up to air them and make them light. The correct size of pan will give you a nice size omelet. For the one person that uses 2-3 eggs use a small pan. This will fit nicely and you can flip the half over and fill it with the fillings.

For a lighter omelet use some water, but if you would like a richer and more flavorful omelet use milk or cream.
