Ingredients

- 1 x lettuce head
- 2 oranges, peeled, broken up in segments (halved)
- 2 chicken breast or left over chicken
- 1/2 cup of pecan nuts
- 1/2 cup pomegranate seeds
DRESSING
- 2 Tablespoons of lemon juice
- 1 teaspoon of grated lemon zest
- 1/4 cup of olive oil
- 2 Tablespoons of honey
- 1/2 teaspoon of salt and pepper each
Instructions
- Wash and clean and dry the lettuce, then peel the orange and break into pieces, even cut them in half. This will be better to eat. Take out the seeds from the pomegranate. Get the nuts.
- Use some left over chicken pieces or sauté a chicken breast then slice into bitable pieces for the salad.
- Mix all the lettuce and the orange, the chicken and the nuts, then top with pomegranate.
- Make the dressing with the olive oil, honey, lemon juice, zest and salt and pepper. Mix well
- Drizzle the dressing over the salad. Serve for a summer or spring salad or a side dish with main meals.
Notes
- add any fruit to this dish you can
- if you do not have lemon zest add some lemon pepper to the final salad.
