Roasted Sweet Potato Wedges recipe for a dinner meal. Delicious easy oven roast side dish for a lunch with meats and vegetables dish.

2 medium sweet potatoes (peeled and cut into wedges)
2 Tablespoons of olive oil
2 teaspoons of crushed garlic
2 teaspoons of dried rosemary herbs (use fresh if preferred)
1 teaspoon of salt
Instructions
Obtain and clean some sweet potatoes, peel them and cut in quarters for wedges for roasting in a sheet pan. Preheat the oven to 220 Deg, C (425 Deg, F)
Once cut into wedges then place them in a large bowl and add some olive oil and sprinkle in the rosemary and crushed garlic with a little salt. Toss the sweet potato until all are covered and coated.
Place in the sheet pan that is also oiled or use a wax proof paper. I don’t use the liner as everything is oiled. Place them evenly on the roasting pan and in the oven to roast. For 30 -35 minutes.
Turn halfway (15 minutes)so that all the sides are cooked, tender and lightly browned evenly and that they get a little crispy.
When they are roasted take them out and sprinkle with some fresh parsley leaves on top for a garnish.
Serve in a bowl on the table for family to help themselves for a side dish with a meal.
