Ingredients
4 eggs
4 tablespoon‘s of milk
4 teaspoons of butter
1 cup of red cherry tomatoes cut in half
1 small red onion sliced
1/2 cup of feta broken up into pieces
salt and pepper
basil leaves
Instructions
Crack eggs into a bowl. Cooking omelettes for two you would need 3-4 eggs. Mix the eggs with a fork and add the salt and pepper. Add the milk and a little butter. Mixing this egg mixture well.
Clean and cut the cherry tomatoes in half, slice the rec onion thinly. The goat feta cheese should be broken up to smaller pieces. Set aside the filling for the omelette once it is cooked.
Warm up a greased pan on medium heat and pour half the egg mixture into it. Leave to start to firm at the bottom. Place the lid of the pan on for the omelette to cook from the top as well. This way the bottom should not burn.
Once the omelette is firmer, you could add the tomato and the feta, (the omelette should be cooked by now. Then add a few slices of red onion. Some basil leave for salad greenery.
Fold over the one half of the omelette and scoop onto a serving plate.
Make the other omelette in the same way. No need for the filling to melt as this is an omelette salad for a breakfast or brunch.
