2cups of self raising flour (280 g)(or all purpose flour adding baking powder)
2cups of Greek yogurt (480 ml)
1 teaspoon of salt
4cups of canola oil for frying
Instructions
Measure the 2 cups of self raising flour in a large bowl.
Add the 2 cups of the Greek yogurt, salt into the dry mixture and with a spatula mix the ingredient together to a sticky dough. If you need to add more flour to make it workable then add a Tablespoon at a time.
Press the dough together with your hands. Flour a surface on a bread board to add this dough to.
Flatten the dough and divide it into 12 portions.
With the oil in a pot coming up to boiling point, test it with a piece of dough to see if it browns in 15 seconds. Then the heat of the oil is at the right temperature. You need a deep oil for these vetkoeks to fry well.
Add carefully a few balls to the oil and fry for plus minus 4-5 minutes a batch. Or until brown on both sides. It should flip by itself and that is why you need deep oil in a pot.
Repeat the frying with the rest of the batch.
Drain with a metal scoop or place on paper towel to absorb any excess oils.
Cut and fill with favorite fillings and serve warm.
Great for a quick supper for the family.

Notes
Don’t let the oil get to hot otherwise it will burn the outside of the vetkoek and the inside will be raw.
