Fry this easy Greek yogurt 3 ingredient vetkoek recipe for a lunch or dinner. Made with just two basic ingredients you have in the fridge. You can practically put anything you want in the vetkoek.

Can you make vetkoek without yeast?
Of course you can make vetkoek with yeast, use some baking powder that uses egg or make the three ingredient recipe with flour and Greek yogurt. But the best original recipe is with yeast. It is actually a bread dough.
Why is my vetkoek raw inside?
Your vetkoek could be raw inside if you oil is to hot and you brown the outside quickly, that will leave the inside raw. The inside should be airy with bubble like texture, and not raw dough.

How To
Measure the 2 cups of self raising flour in a large bowl.
Add the 2 cups of the Greek yogurt, salt into the dry mixture and with a spatula mix the ingredient together to a sticky dough. If you need to add more flour to make it workable then add a Tablespoon at a time.
Press the dough together with your hands. Flour a surface on a bread board to add this dough to.
Carefully round up the dough and divide it into 12 portions.
With the oil in a pot coming up to boiling point, test it with a piece of dough to see if it browns in 15 seconds. Then the heat of the oil is at the right temperature. You need a deep oil for these vetkoeks to fry well.
Add carefully a few balls to the oil and fry for plus minus 4-5 minutes a batch. Or until brown on both sides. It should flip by itself and that is why you need deep oil in a pot.
Repeat the frying with the rest of the batch.
Drain with a metal scoop or place on paper towel to absorb any excess oils.
Cut and fill with favorite fillings and serve warm.
Great for a quick supper for the family.

- Don’t let the oil get to hot otherwise it will burn the outside of the vetkoek and the inside will be raw.
