How To
Preheat the oven. Wash and peal the potatoes and slice, thick enough to cook quickly. Slice some of the onion in slices and some in pieces to cook with the vegetables and bring out the flavor.
We use a sausage that was spice with a mustard and onion and placed it in the middle of the oiled sheet pan. Then place the sliced potato and turned them over to coat them with the oil. This will not leave them to dry out.
Sprinkled with frozen veggie mix of peas and carrots and with the bits of onion. Added more onion rings on top, spiced with simple salt and pepper and garlic, and place the sheet pan in the heated oven to roast for lunch.
But the most important thing to do for this flavorful meal is to turn over the potatoes and sausage half way into the roasting. As well as poke the mustard onion sausage so those flavorful juices can escape and be absorbed into the potato. Its to die for.
It should take around 30 minutes to roast at 200 deg. C or 400 deg. F. in my gas oven.
Test the potatoes to see if they are tender and the sausage should also be golden then all is done.
