An easy and healthy filling homemade chicken salad recipe idea to create for a hot summer meal or side dish for braai or barbecue lunch or dinners. Packed with protein when you include boiled egg and chicken pieces and beans. Adding in some fresh greens and lettuce with beans and corn, topped with a sauce for taste.
Chicken salad recipes are everywhere, and people do have favorites that are old standby recipes. The following recipes will put a little spice in that ordinary old chicken salad recipe.
The chicken in these recipes can be cooked fresh, purchase already cooked, or even use a rotisserie chicken from the grocery store. That would make this an easy recipe to make in a hurry. Even if you use left over chicken.
Is mayo used as a salad dressing?
Yes, mayonnaise (mayo) is the most versatile salad dressing for every salad or sandwiches. Used in some homemade salad dressing with yogurt for a healthy and different dressing or sauce.
How do you keep chicken salad fresh?
Fresh salad made with chicken that is fresh but cooked and does not include tomato, may be stored sealed in a fridge for up to 3 – 4 days. Tomato will seep liquid into the salad and does not keep well for long. Avocado will brown quickly even if you have added some lemon juice. So the answer is it depends on what is in the salad to keep well. Otherwise a salad could be good chilled for at least a day or two.
Why does chicken salad get watery?
The salad when stored or made up a few hours before hand would get watery if you added your fibrous veggies or sauces or dressing ahead of serving the salad. It is best to add those fibrous ingredients and dressing when you serve the salads. Once it is stored over night or for a day you need to toss up the salad to mix the sauces into the salad ingredients as the sauce would have gone to the bottom of the bowl.
Ingredients

- baked or black beans
- can corn, drained
- medium green onions, chopped
- red bell pepper, chopped
- green bell pepper, chopped
- head of lettuce, shredded
- cup cheddar cheese,
- salsa, mild or hot – your choice Or mayonnaise mixed with yogurt.
- cilantro, chopped
- ranch dressing
- boiled eggs
Add any ingredients you would love to put into this recipe. Such as cucumbers and asparagus, tomatoes and then sprinkle with hemp seeds or sesame seed. Even pumpkin seed would be great. How To
In a large bowl place the cut up and chopped ingredients including the chicken. A boiled egg can be added as well. This will make this dish very appetizing and filling.
Toss all of these together and place in a serving bowl.
Then you would mix the salsa and ranch dressings as per recipe ingredients and directions below. Or use some mayonnaise and yogurt.
Pour over the salad mix, cover with cling wrap and place in the fridge until needed.

Ingredients
- 3 – cups chicken, cooked and chopped
- 1 – can brown (baked) or black beans, drain and rinse the beans
- 1 – can corn, drained
- 3 – medium green onions, chopped (or red)
- 1 – red bell pepper, chopped
- 1 – green bell pepper, chopped
- 1 – head of lettuce, shredded
- 1 – cup cheddar cheese, (blocks for shredded)
- 1 – cup salsa, mild or hot – your choice
- 1/4 – cup cilantro, or parsley chopped
- 1 – cup ranch dressing
- 2 boiled eggs
Instructions
- In a very large bowl, put the chicken, black beans, corn, onions, red and green pepper, lettuce, boiled egg and cheese.
- Toss and mix it all together.
- In another bowl, mix the salsa, ranch dressing, and salsa together, or mayonnaise and yogurt mixed.
- Pour the mixture over the salad and mix it up to coat the salad.
- Sprinkle with hemp or sesame seeds.
- Put into the fridge until time to serve.
