Ingredients

Scale
  1. 4 eggs
  2. 375 ml castor sugar (fine sugar)
  3. 60 g butter
  4. 250 ml milk
  5. 500 ml (2 cups ) flour
  6. pinch of salt
  7. 1 tsp of vanilla essence
  8. 2 tsp of baking powder
  9. FOR VANILLA COFFEE FROSTING
  10. 250 g soft unsalted butter
  11. 2 1/2 cups of icing sugar
  12. 2 tsp of vanilla essence
  13. 1 tsp of coffee granules (melted in a tbsp of water)

Instructions

  1. Preheat oven to 180 Deg. C
  2. Grease and line 2 baking cake pans.
  3. Whisk or mix the eggs and castor sugar until all sugar has melted. Add vanilla mix.
  4. Heat the butter in the milk, just to melt the butter.
  5. Whisk and sieve dry ingredients. flour, salt and baking powder.
  6. Then combine the dry mixture with the egg mixture. Mix well.
  7. Adding in the warm milk and melted butter then mix for the final time.
  8. Fill evenly both greased baking pans, Bake in the oven until done.
  9. Bake for 25 – 30 min. in oven at 180 Deg. C
  10. Test with a knife or skewer if done and that they come out clean.
  11. Leave to cool on cooling rack before icing.

Method to make Vanilla coffee frosting.

  1. Beat the soft butter until smooth and fluffy for about 5 minutes.
  2. While mixing slowly add the icing sugar slowly until all mixed.
  3. The on a medium speed mix in the vanilla and coffee mix. beat until a good consistency is achieved.
  4. Fill the cake in between the two cakes, with icing and then place the other cake on top and decorate the frosted icing as desired. Or pipe decorations and add cherries or berries or any other decorative fruit you have on hand. 

Notes

  • the texture or color of the sponge will change, when you use brown sugar, or organic eggs.
  • The flour also differs depending on where you live.
  • Use cake flour for best results.
