Make this Easy Shortbread Crust Pastry

OR make a biscuit and butter base below.

  1. 1 packet of Graham crackers or Tennis biscuits or coconut biscuits 240 grams
  2. 115 grams of cold butter
  3. 35 grams of brown sugar

The Filling

  1. 6  (3 Lbs)green granny smith or baking apples. (some of each) Sliced.
  2. 1/2 cup (100grams) brown sugar
  3. 3 Tablespoons of flour
  4. 1/2 teaspoon of cinnamon powder

Oat streusel topping

  1. 3/4 cup (55g) rolled oats
  2. 1/4 cup (35 g) flour
  3. 1/4 cup (45 g) brown sugar
  4. 1/4 cup of cold butter cut into small pieces

 

 

 

 

Instructions

  1. Use this Easy shortbread Crust Pastry
  2. Or use a biscuit base. Recipe below. no. 4
  3. Preheat the oven at  190 Deg. C(375 Deg. F)
  4. Crush the biscuits finely and add the sugar and melt the butter. Add altogether and mix together. Grease or spray and cook the dish base. Or line it with wax proof paper. Totally up to you. Spread it out on the bottom of the dish press it level. Place in the oven and bake it for 10 minutes. Set aside.
  5. Next step is to combine your apple slices with the sugar, flour and cinnamon in a bowl to coat them all well.
  6. Add the apple mix over the top of the biscuit or shortbread crust base. Level them out evenly in the baking dish.
  7. Now in a bowl mix the oat streusel with, oats, flour and brown sugar together. Then add in the butter pieces and press all of these ingredients together with a fork until all is totally combined. It should look like a cookie dough.
  8. Sprinkle and crumble this oat mixture over the apples in the dish equally.
  9. Place this dish in the oven and bake for 30 minutes until the streusel is golden brown. Take the dish out and cover with aluminum foil and bake for a further 40-50 minutes until the apples inside are cooked and they should bubble at the edges of the dish. Then they are done.
  10. Take the apple pie out and leave to cool on a cooling rack for at least 2 hours.
  11. Serve sliced when cool with some whipped cream or ice cream.
  12. Store in the fridge the left overs, covered and sealed to keep the apple pie moist.
