Cake
- 2 cups all purpose flour
- 1tsp baking soda
- 1T cinnamon
- ½ cup salted butter softened
- 1 ¼ cup sugar
- ½ cup sour cream
- 1 tsp vanilla extract
- 3 medium bananas (2 cups mashed)
- 2 eggs
Cream Cheese Frosting
- 4oz. cream cheese at room temperature
- ½ cup salted butter at room temperature
- 1 t vanilla extract
- 3 cups powdered sugar
Instructions
- Preheat oven to 350 before greasing two – 8 inch cake pans with no stick spray
- In a large bowl blend the butter, sour cream and vanilla extract. Add eggs one at a time until well combined.
- In a separate bowl combine flour, sugar, baking soda and cinnamon.
- In a measuring cup or bowl mash bananas with a fork and fold into the butter mixture.
- Add dry ingredients to banana mixture until thoroughly mixed.
- Pour batter equally into cake pans equally and bake for 30 minutes or until tops are slightly brown and center is firm.
- In a medium bowl beat cream cheese, butter and vanilla extract. Add powdered sugar gradually until combined and smooth.
- When cakes are cooled, add frosting to the top of one layer
Add the second layer and frost to your liking!
