Cake

  1. 2 cups all purpose flour
  2. 1tsp baking soda
  3. 1T cinnamon
  4. ½ cup salted butter softened
  5. 1 ¼ cup sugar
  6. ½ cup sour cream
  7. 1 tsp vanilla extract
  8. 3 medium bananas (2 cups mashed)
  9. 2 eggs

 Cream Cheese Frosting

  1. 4oz. cream cheese at room temperature
  2. ½ cup salted butter at room temperature
  3. 1 t vanilla extract
  4. 3 cups powdered sugar

 

Instructions

  1. Preheat oven to 350 before greasing two – 8 inch cake pans with no stick spray
  2. In a large bowl blend the butter, sour cream and vanilla extract. Add eggs one at a time until well combined.
  3. In a separate bowl combine flour, sugar, baking soda and cinnamon.
  4. In a measuring cup or bowl mash bananas with a fork and fold into the butter mixture.
  5. Add dry ingredients to banana mixture until thoroughly mixed.
  6. Pour batter equally into cake pans equally and bake for 30 minutes or until tops are slightly brown and center is firm.
  7. In a medium bowl beat cream cheese, butter and vanilla extract. Add powdered sugar gradually until combined and smooth.
  8. When cakes are cooled, add frosting to the top of one layer

Add the second layer and frost to your liking!

 

 

Notes

Options: Cinnamon pretzel pieces to the top as shown or get creative with your choice of decoration!
