1. Take the steak out of the refrigerator, it should be at room temperature. Brush it on all sides with olive oil and let it marinate for 15-20 minutes. Peel the garlic and crush it with the broad part of a knife.

4. While cooking, watch thermometer and when temperature is 2-5ºF below desired temperature, remove meat from grill. Place meat in foil in 2 layers, season the steak with salt and pepper and cover with foil. Leave the steaks for 5 minutes and serve immediately.
