Is butternut pumpkin the same as squash?
Butternut squash (Cucurbita moschata) known as butternut in South Africa, or butternut pumpkin in Australia or New Zealand. It is a winter vegetable that grows as a vine and tastes sweet and a bit nutty, but so delicious. You can roast butternut or mash or add in casseroles.

- A medium butternut squash
- salt
- brown sugar
- cinnamon

How To
Cut and take the seeds out of the butternut. Cut off the skin and slice and chop into medium sized squares.
In a medium pot on the stove top, add cut up butternut pieces. Add water to just under the butternut pieces. (not a lot of water) Add salt and bring to boil. Simmer down until soft and water has been incorporated. But never leaving the butternut dry.
Add the brown sugar and lastly the cinnamon. Mix and when the butternut is soft, mash with a hand potato masher. Taste to see if enough spices were added.
Serve hot as a healthy side dish with other meals.
