Chicken A La King & Rice is an amazing dish made from scratch with shredded chicken or left over chicken with a tasty rice dish and veggies.

Ingredients

Scale

1 packet of cream of mushroom soup

1 whole chicken (boiled or left over chicken shredded)

1 large tin of button mushrooms or about 400g of sliced fresh button mushrooms (cooked)

1/4 pint (125 ml)of dairy cream

1 cup of sherry

2 Cups of rice

Some frozen veggies. (or any left overs from a meal)

Instructions

Boil the whole chicken until soft and done. Do not add salt as the soup is salty enough.

Drain the chicken and allow to cool before shredding the chicken for this dish.

Keep the juice of the tin of mushrooms for stock. (if using tin mushrooms)

Prepare cream of mushroom soup with 1 up of stock (above) and 1/2 cup of cream. Cooking until it thickens.

Add the mushrooms and shredded chicken pieces then bring to a boil and add the sherry.

Use the remainder of the stock to cook the rice. 

Cook some frozen veg. (peas and carrots and corn)

Once all is cooked plate up the rice and veggies then the chicken a la king.

This meal can be made with left overs of a roasted chicken with left over veggies or possibly even rice.
