An easy savory Chicken Bacon Black Bean Quiche recipe idea to oven bake with an Easy Shortbread Crust Pastry for a breakfast or brunch. Even a lunch or light supper. Filling is full of protein and tangy cheddar cheese. Topped with an olive and spiced with thyme herbs. Makes a great recipe to use left overs with. Very versatile for the fillings to change up to what you require.

Maybe your egg and milk ratio is not good. For every egg you need half a cup of milk or liquid. Even for creams. If you use to little liquid ratio to eggs then the quiche will come out dry.

Oh yes vegetables or meats should be cooked before using in a quiche for a fillings. As they would take longer to cook as the egg custard would making the quiche very dry. Always sauté onions and steam veggies before adding to the quiche as fillings. You can use left over meats and vegetables for the recipe.

- red onion sautéed.

How To
Preheat the oven. After greasing the pie dish or tart dish, add the pastry and bake it.
Mix up the chicken, bacon, beans, onion and cheese and place in the baked quiche dish, once the base is cooked.
Then mix the egg and milk mixture in a bowl and spice up with salt and pepper and thyme. Pour this over the other ingredients in the quiche and top with cut black or green olives for decoration.
Bake in the oven until done and tested that the test knife comes out clean.
Cool on a rack for about 10 minutes or until you would prefer to eat it warm.

Ingredients
- 1 1/2 cups of cooked shredded chicken
- 1/2 cup of bacon bits fried
- 1 cup of grated cheddar cheese
- 1/3 cup of red onion finely chopped
- 1/3 cup of black beans
- 4 large eggs
- 2 cups of milk
- 1 teaspoon of salt and pepper
- 1/2 teaspoon of dried or fresh thyme
- a few black olives cut into slices for decorating
- Easy bought pie pastry or shortbread pastry, a recipe to bake –> Shortbread Crust Pastry recipe
- basil leaves to place on top.
Instructions
- Preheat the oven to 225 Deg. C (450 Deg. F) to bake the pastry crust
- Bake the pastry crust for 20- 25 until firm.
- In a large bowl add the shredded cooked chicken, fried bacon bits, sauté onion, black beans, grated cheese. Mix all together.
- Place these ingredients in the baked crust dish.
- In another bowl mix the egg and milk and salt and pepper with thyme well. Then pour over the ingredients in the quiche dish. (for the correct ratio to get a good custard mix, there should be 1 egg per 1/2 cup of milk or cream)
- Add some black olives that were sliced on top for decoration.
- Turn oven to 150 Deg. C (300 Deg. F)
- Bake the quiche for 40-45 minutes until tested baked, and the knife comes out clean.
- Place on a cooler rack for at least 10 minutes or so until warm enough to serve. Place the basil leaves on top.
