Creamy Sour Cream Cucumber Salad recipe with Feta and fresh Mint for a cold side dish. Healthy and lemon juice brings the tangy flavors.

Ingredients

  1. 1 large cucumber
  2. 1/2 lemon
  3. 1 tbsp. chopped fresh mint
  4. 1/2 cup sour cream
  5. 2 tbsp. feta
  6. salt, pepper.

Instructions

1. Clean, dry cucumber in clear, thin slices. It is convenient to do this with a vegetable peeler.Arrange the slices on a board and salt them. Allow them to cure for 10 minutes.

2.  Blot the cucumbers of excess juice and transfer to a bowl. Pour in the lemon juice and stir.

3. Stir in the sour cream.  Crumble the feta and place in the bowl. Gently mix the salad together.

4. Transfer the finished salad to a serving dish. Sprinkle the salad with the mint and black pepper. Serve with the lemon wedges.

The salad should not be prepared in advance and should not be stored.

Variations:

1. Use feta with aromatic herbs and get different flavors from the same recipe.

2. For those who like spicy flavors, you can add garlic and jalapenos.

3. Lemon juice can be substituted for apple cider vinegar.
