Ingredients

For 1.5 Pound Loaf

  1. 7/8 cup of water
  2. 1 1/2 Tablespoons of melted butter
  3. 1 teaspoon of Himalayan salt
  4. 3 cups of bread flour
  5. 2 Tablespoons of brown sugar
  6. 1 1/2 Tablespoons of milk powder (dry)
  7. 1 teaspoon of cinnamon
  8. 1 teaspoon of mixed spice
  9. 1/2 teaspoon of nutmeg
  10. 1 3/4 teaspoon of active dry yeast
  11. 1 cup of raisins (to add when machine requires it)
  12. optional 50 g of mixed peel. or (some orange zest)

For the cross

  1. 50 g of flour
  2. 2 tablespoons of water

Glaze

  1. 2 level tablespoons of granulated sugar
  2. 2 tablespoons of water

 

Instructions

  1. Firstly plug in the bread machine and make sure the bread pan is clean and set in place firmly. Spray a cook, lightly to prevent bread from sticking.
  2. Measure and add all liquid ingredients to the bread pan.
  3. Measure and add the dry ingredients (except the yeast) to the bread pan in the middle.
  4. Use your finger to form a hole(space) in the flour (but not deep enough into the liquid). This is where you would place the yeast. The yeast must NEVER come into contact with a liquid in the bread pan. Place the teaspoons of active dry yeast in this hole.
  5. The baking pan should be snapped into place already, then close the bread machine lid.
  6. Set the bread machine to dough mix.
  7. When it mixes and then beeps that is when you add your raisins and orange zest or chopped mixed peel.
  8. Leave to mix the dough. When it is done, then flour your surface to take out the dough mix. Knead the dough and divide it into 12 equal round portions.
  9. Grease the baking sheet, and place them with space between each other. Cover with a cloth or plastic and leave to rise for about 30 minutes.
  10. With a sharp knife mark cross on each bun. They should double in size.
  11. Preheat the oven to 220 deg. C. (425 deg. F)
  12. Form the flour paste for cross mixture with 50 g of flour and about 1-2 tablespoons of water. Roll this dough out and form thin strips. Once the buns have risen, Brush the strips with water and place these thin strips in the cut made for the cross. Place in the oven to bake for 15 minutes.
  13. While they bake make the glaze with 2 tablespoons of granulated sugar and 2 tablespoons of water and heat gently over the stove until all the sugar has dissolved and clear
  14. When the hot cross buns are baked, brush them with the sugar glaze while they are warm, once out of the oven.
  15. Leave to cool on a cooling rack.

Notes
