Ingredients

  1. 1 ½ pounds chicken breasts, sliced into thin strips
  2. 1.25 oz packet fajita seasoning
  3. 1 tablespoon olive oil
  4. 1 green bell pepper, sliced into strips
  5. 1 red bell pepper, sliced into strips
  6. 1 medium yellow onion, sliced into strips
  7. 1 ½ cups long grain white rice (not minute rice)
  8. 14 oz can chicken broth
  9. 8 oz cheddar jack cheese, shredded
  10. 1 tbsp fresh chopped cilantro for garnish

Instructions

  1. Preheat the oven to (190 deg. C) 375 deg. F
  2. Cut your peppers, onions, and chicken.
  3. Add the oil to a cast iron skillet and heat over medium heat, then add the chicken, peppers, onions, and fajita seasoning. Cook for a few minutes.
  4. Add the rice to the pan, and stir into the mixture of chicken and veggies for a minute. Then add the broth, and give a quick stir..
  5. Cover the skillet with foil and bake in the preheated oven for 40 minutes.
  6. Remove from the oven, and remove and discard the foil. Give the casserole a good stir.
  7. Sprinkle cheese all over the top of the skillet, and return to the oven for 5 minutes, until the cheese is melted.
  8. Sprinkle with fresh chopped parsley before serving.
  9. Serve with a salad of choice or other side dishes of vegetables.
