Ingredients

Scale
  1. 2 cups of flour
  2. 1/4 cup of olive oil or butter
  3. 1 cup of brown sugar
  4. 2 eggs
  5. 1 cup of mashed ripe bananas
  6. 2 teaspoons of baking powder
  7. 1 level teaspoon of bicarb of soda
  8. pinch of salt
  9. 1 teaspoon of cinnamon
  10. 1 teaspoon of vanilla extract
  11. 1 cup of chocolate chips

Instructions

  1. Preheat oven to 175 Deg. C (350 Deg. F)
  2. Grease or line the bread pan you will use.
  3. In a large bowl mash the ripe bananas and leave covered for last.
  4. In another medium bowl add the sugar and the oil and beat quickly. Adding the eggs one at a time and beating, also add the vanilla until mixed. DO NOT overmix.(it will make the bread dry)
  5. Sift the flour and baking powder and baking soda, Add the salt and cinnamon.
  6. Mix the wet ingredients in the dry with a spoon, then add the mashed bananas.
  7. Just before adding the banana mixture to the bread pan add the chocolate chips. Stir them in lightly.
  8. Bake the banana bread in the oven for at least 1 hour until tested cooked, (the clean knife comes out clean.)
  9. Leave to cool on a cooling rack in the bread pan, for a few minutes before taking out of the pan. Leave to cool on the cooling rack.

Notes

Filling ideas

Large or small chocolate chips may be added. Add them lastly.

Add some raisins as well.

Cocoa may also be included in the flour mix for a chocolate banana bread.
