Ingredients

  1. 4 medium potatoes
  2. 2 carrots
  3. 1 onion
  4. 1 leek
  5. 12 oz. of corned beef (we got ours from the deli)
  6. 1/2 cup beef stock or broth
  7. 1 tablespoon avocado oil
  8. 1/2 teaspoon salt
  9. 1/4 teaspoon black pepper

Instructions

  1. Preheat the slow cooker on the HIGH setting while you prepare the ingredients.
  2. Chop the onion into small pieces.
  3. Wash the carrots, potatoes, and the leek.
  4. Cut the carrots and potatoes into bite-sized pieces. About ½ inch.
  5. Slice the leek in half lengthways and finely slice.
  6. Place the vegetables in the slow cooker and pour over the stock.
  7. Add the seasonings and stir well to mix.
  8. Put the lid on the slow cooker and cook for 3 hours, stirring halfway through. When it’s cooked, the vegetables will have absorbed the liquid.
  9. Check the internal temperature to make sure it’s at least 145 degrees F.
  10. Cut the corned beef into bite sized chunks.
  11. Heat the oil in a frying pan and brown the beef until slightly crispy for 5 minutes. (optional)
  12. Mix the corned beef hash with the vegetables, and serve.
  13. Optional toppings: fried egg and horseradish or mustard.
