Ingredients

  1. 3 large chicken thighs
  2. 1/2 cup orange juice
  3. 1/4 cup sliced white onion
  4. 1 lemon
  5. 2 cloves of garlic
  6. 1 tbsp. chipotle
  7. 1/2 chili
  8. 1 tsp. Mexican oregano
  9. 1 tsp. cilantro
  10. 1 tbsp. paprika
  11. 1/2 tsp. granulated garlic
  12. 1 1/2 tbsp. olive oil
  13. 1 tsp. salt
  14. pinch of cumin, 2 cloves

Instructions

1. Slice the chili into thin rings, remove the zest of half a lemon.

2. Place the zest, chili, chopped onion and garlic in a marinade bowl. Add all the dry spices, salt, olive oil, orange juice and 2 tbsp lemon juice. Stir the marinade.

3. Place the chicken, stir and leave for 4 hours at room temperature or for 24 hours in the refrigerator.

4. Heat a grill pan and place the marinated thighs on it and grill for about 6 minutes. Turn the chicken over and continue cooking in the same way. Check the temperature inside the meat – it should be 175°F. If the temperature is lower, cover the pieces with foil and reduce the heat. Place the PolloAsado on a serving plate. Finish serving with chili, tomatoes, lemon slices and cilantro. Optional sauce and boiled rice can be served in addition.

Notes

1. You can experiment with your favorite citrus juices – grapefruit, lime, tangerine or a mix of these.

2. Add fresh herbs with a bright flavor to the marinade – mint, cilantro, parsley.

3. Serve chicken in bowls, burritos or in salads.
