How To
Soak the rice for an hour or two first. It will become murkey.
Rinse it off and then add the milk as the liquid to the rice cooker. Add the vanilla bean according to the recipe and a stick of cinnamon.
Switch the rice cooker on and stir half way to mix the rice up well. (follow the recipe)
Leave to cook. When the rice is cooked remove the vanilla bean and cinnamon stick.
Add some ground cinnamon, the castor sugar and mix. Leave the rice cooker on warm for about 15 minutes until its nice and creamy and firm.
Serve in a bowl with nuts and a sprinkle of cinnamon. For a comfort warm creamy dessert for the family.

Ingredients
- 1 liter (4 cups) full cream milk
- 1 vanilla bean stick (split and scrape the seeds off)
- 1 cinnamon stick
- 3/4 cup (165g ) medium grain white rice
- 1/3 cup (70g) of castor or fine sugar
- 1/2 teaspoon of ground cinnamon
- Nuts of choice
Instructions
- Soak the white rice for an hour or two first. It will be a little murky. Rinse and drain the water off and then add the 4 cups of milk as the liquid to the rice cooker. Add the split vanilla bean and a stick of cinnamon.
- Switch the rice cooker on and leave to cook for about 35 minutes. Do stir half way to make sure all is mixed in well.
- Once the rice is cooked then remove the vanilla bean and cinnamon stick.
- Add in the 1/3 cup of castor sugar and 1/2 teaspoon of ground cinnamon. Stir up well. Place lid on the cooker and leave on warm for another 15 minutes for it to set and cook finished.
- Serve the creamy pudding warm in a bowl for the family. Add some nuts or cocoa on top.
- A good idea to serve in pleasing decorative glass or dessert bowls for an attractive creamy fine dining dessert. Decorate with nuts of choice.
