Ingredients

  1. 1 lb asparagus washed with the dried ends removed
  2. 1 tbsp olive oil
  3. 1/2 tsp kosher salt
  4. 1/2 tsp freshly ground black pepper
  5. 1 tbsp fresh lemon juice and slices of lemon.
  6. Garlic cloves, or garlic head cut in half.
  7. Red onion, sliced in half.
  8. A couple of red cherry tomatoes.
  9. 4 5-oz salmon fillets
  10. 1 tbsp Dijon mustard
  11. 1 tbsp maple syrup
  12. 2 tsp everything bagel seasoning, if you do not have that make this seasoning mix to apply to the salmon. ( 1 tablespoon for each of garlic powder, onion powder and 2 tablespoons for each of poppy seed and sesame seeds alike)
  13. 1/2 cup. Chopped fresh parsley for garnish.

Instructions

  1. Preheat the oven to 190 deg. C (375 deg. F).
  2. Spray and cook the sheet pan or grease it.
  3. Clean and wash the asparagus and cut off the dry ends. Layer them on the sheet pan and drizzle olive oil over them. Roll them in the olive oil so they are totally oiled. Do the same with the cherry tomatoes and onion as well as the garlic cloves. Sprinkle some salt and pepper over the asparagus.
  4. In a small bowl mix the Dijon mustard and maple syrup. 
  5. Place the salmon fillets on the oiled sheet pan and make sure the fillets are also covered with the olive oil. Place some lemon slices on the sheet pan. Make sure every thing has been rubbed and olive oiled. 
  6. Brush the salmon with the mustard and maple syrup well. Sprinkle everything bagel seasoning on top of the salmon. Or use this mixture if you do not have that. ( 1 tablespoon for each of garlic powder, onion powder and 2 tablespoons of poppy seed and sesame seeds alike)
  7. Place the sheet pan in the oven to roast for about 8-12 minutes until the asparagus and salmon are cooked and tender. 
  8. Remove the sheet pan from the oven and place on a cooling rack and allow the salmon to rest for about 4-5 minutes. Drizzle the salmon fish with some fresh lemon juice. Add the chopped fresh parsley for garnish.
  9. Serve up this healthy and tasty salmon fish meal with asparagus roasted tomato and onion.
  10. An easy all in one meal to prepare in the same pan for a dinner or lunch.
