Easy Swiss Chard Mushroom and Feta Quiche recipe that has a base of swiss chard or spinach, mushrooms, feta. A tasty crustless savory quiche.

Ingredients

Scale
  1. 240 g. of Mushrooms sliced
  2. 1/2 tsp of garlic flakes (or Chopped cloves)
  3. 300g swiss chard or spinach shredded
  4. 4 eggs
  5. 1 Cup of milk
  6. 60 g of Feta cheese (or feta substitutes)
  7. 1/4 cup of Parmesan cheese grated
  8. 1/2 cup of Mozzarella cheese grated
  9. Salt and pepper to taste
  10. Parsley or basil for top of cheese.

Instructions

  1. Heat oven to 180 Deg. C
  2. Grease the pie or tart dish.
  3. Rinse and slice mushrooms, then sauté mushrooms garlic and salt and pepper. for about 5 – 7 min. till tender.
  4. Cover the bottom of the pie dish with shredded swiss chard or spinach leaves.
  5. Add the cooked mushroom then the crumbled feta over the top of the mushrooms.
  6. Whisk eggs milk.
  7. Pour this egg and milk mixture over the mushroom and feta and then sprinkle the cheese, mix over the egg and sprinkle some parsley or basil over the top.
  8. Bake until brown and firm for about 45 minutes to an hour.
  9. Leave to cool a little on a cooler rack.
  10. Serve warm or cool as desired

Notes

This quiche can be used as a light meal as well LCHF dish. Very easy to make and tasty.
