Delicious puff pastry browned that tops this meal for the family or special fine dining dish.
What cut of beef is best for Beef Wellington?
For a traditional beef wellington, the beef tenderloin is used which is the most tenderest cut of beef. Also use any lean juicy cuts such as shoulder petit tender beef. But for a difference such as this recipe provided we used ground beef, with herbs and spices. For a different take on a wellington.

You can use any tender beef cuts for this beef wellington, such as striploin or ground beef. As we used in this recipe.
How do you make Beef Wellington without a soggy bottom?
Firstly when you make your pate or duxelles, you need to make sure all the liquid is cooked out to prevent making the bottom of the wellington soggy. An option is to use a different dough, such as phyllo dough which is much dryer than a buttery puff pastry. But puff pastry is delicious. It is all about having less moisture in the meat and paste inside the pastry cover.

- wild mushrooms
- butter
- white onion
- garlic cloves
- dijon mustard
- egg
- thyme sprigs
- olive oil to grease the grill

How To
Prepare your ground beef with the herbs and spices.
Mix them well and make some patties. While you grill these, get the puff pastry to defrost or have it cold enough from the fridge to work with.
Place the grilled patties on a plate to cool a little and baste them with the dijon mustard.
Place the peeled and chopped onion and garlic in a blender. Add the mushrooms and thyme and chop to a paste. Fry the mixture in word oil in a pan. This makes a pâté, duxelles (a finely chopped mushroom mixture)

Cut dough into equal squares and roll each square slightly to 0.2-inch thickness.
Place 1 tablespoon of the duxelle on each square and spread it over the surface with the back of a spoon. Place a burger on top of the duxelles.

Fold the future wellington down and brush with beaten egg. Use a shaped knife to cut a lattice to decorate the product.
Place a lattice on eachwellington and brush with egg. Transfer to a silicone baking mat and bake in a 356°F oven for 30-40 minutes. Cool on the lattice.
