For a quiche you may use heavy full cream or full cream milk or even half and half. For a quiche made with cream, such as this recipe, will be richer in taste. With milk it will give a lighter taste. Then when you make half and half it will be in the middle. So depends on your taste.
Should you prebake crust for quiche?
Yes, you should prebake your quiche crusts before adding the fillings. With this recipe we use grated potato instead of pastry. But still have to prebake the hash brown potato before.
Should you use butter or oil for hash browns?
For a quiche crust made with hash browns it would be suggested to use butter and not oil. Butter will help the browning and the flavor of the hash brown potato. Grease your pans with butter and add a little to the hash brown potatoes for a tastier browner quiche crust.

How To
Preheat oven to 180 deg. C (360 deg F) 200deg. C gas oven.
Peel and grate the potato for hash brown crust. Squeeze any excess liquid out of the potato with a clean cloth. Add some salt and pepper, melted butter to the grated potato. (helps brown the potato and its much tastier)
In a spring form pan with removable sides, grease with butter or spray and cook. Also have a small sheet pan to place under the spring form pan. (for leaks). Press equally the grated potato on the bottom and up the sides of the pan. Bake in the oven for 20-30 minutes until lightly cooked.(depending on your stoves)
While the potato crust is baking, fry the ingredients.
In a heated pan add some olive oil and lightly fry the onion and mushrooms and the bacon pieces. Remove and place in a bowl.
Grate the cheese.
In another bowl break the eggs and add the cream and mix up well. Add some garlic and salt and black pepper.
Finally add the bacon, mushroom, onion, and the grated cheese to the egg mixture. Mix it in well.
Add the egg mixture to the potato crust in the cake pan. Place in the oven and bake for at least 25-30 minutes until you see that it is lightly brown and filling tests done with a clean knife.
Serve cut warm for a breakfast or brunch.

Notes
- Use a sheet pan under the spring form cake pan, as the liquid filling can leak.
- If the potato base is not totally baked then you can slide the quiche in a pan and complete the bake of the potato.
- for warming up the quiche if made ahead or to warm up left over quiche, warming up in the pan is a good idea.
