Ingredients

  1. 2 ripe bananas
  2. 2 large eggs
  3. 2 tbsp. of topinambur syrup, or maple or honey
  4. 3 tbsp. coconut oil
  5. 1/2 tsp. baking soda
  6. 1 tsp. baking powder
  7. pinch of salt
  8. 2 cups almond flour
  9. 1 tbsp. almond petals

Instructions

1. First, preheat your oven to 350°F (175°C). While the oven is preheating, you can prepare a metal bread mold by greasing it with a little coconut oil. Peel the bananas, chop them randomly and place them in a bowl. Add the eggs and beat the mixture into a lumpy foam.

2. Heat the coconut oil in the microwave. Add the oil to the bowl. Pour in the maple or topinambur syrup. Stir to combine.

3. Pour in the dry ingredients – almond flour, baking soda, salt and baking powder. Mix the dough. Allow the dough to rest for 10 minutes at room temperature.

4. Transfer the dough to the baking dish, spreading evenly with a spatula. Sprinkle with the almond petals. Bake for 50-55 minutes until the banana bread is golden brown on top and a toothpick inserted in the center comes out clean.

5. After baking, remove the banana bread from the oven and allow it to cool in the mold and then transfer it to a rack to cool completely. Slice the almond flour banana bread into thick slices and serve with a cup of coffee or tea.
