Oils are a better choice as it is a liquid and can get absorbed easily in the other ingredients. They also keep you muffin moist and soft. Butter can be used in some recipes if required. Use healthy oils such as olive oil or coconut oil.
How does Greek yogurt affect baking?
Using Greek yogurt can really make your muffin fluffier. The acidity in the Greek yogurt will activate the baking soda and this will allow the muffin to also rise nicely.
Is extra virgin olive oil good for muffins?
Extra virgin olive oil is so amazing for muffins, it is a great substitute for butter and other inferior oils. Using healthy coconut oil is also a good choice.

You always get these things done before you start to bake or mix your ingredients. Preheat your oven.
Grease or line you pans, and get all your ingredients ready to prepare. Clean and peel the apples then grate the apples to make a cup full, and dice some apples in small pieces to make a cup full.
Mix in a large bowl the dry ingredients such as the flour baking powder, baking soda and the cinnamon and salt. Wisk this dry mix up to make it light and fluffy. Add the grated and chopped apples to the flour mixture (if the apple have liquid in then drain them first.) Mix them in well.
In another bowl add the honey and coconut oil. Mix them up well. Then in another bowl add the honey and coconut oil. Mix them up well.Add the eggs and whisk them in well, and then add the yogurt, apple sauce and vanilla extract. Mix this all up.
Pour the wet ingredients into the dry ingredients and mix up well with a spoon. This makes a thick batter. Spoon this batter into the grease muffin pans equally and top the muffins with brown sugar.
Bake in the oven for 20-25 minutes until the muffins are golden on top and test done with a clean knife or toothpick.
Leave to cool for 5 minutes on a cooling rack then remove them or tip the muffin pan over and leave them to fall out. Leave to cool on a cooler rack until cool or eat as you please.

- 1 3/4 cups of flour
- 2 teaspoons baking powder (depends if you live in high or low altitude.)
- 1 teaspoon of cinnamon powder
- 1/2 teaspoon of baking soda
- 1/2 teaspoon salt
- 1 cup of grated apple
- 1 cup of small cut up apple pieces
- 1/3 cup of melted coconut oil
- 1/2 cup of honey
