Ingredients

Units Scale
    1. 1 pink lady apples cored and sliced
    2. 1 granny smith apples, cored and sliced.
    3. 3 ribs of raw celery, sliced.
    4. Iceberg lettuce head leaves, washed.
    5. 1 cup of arugula leaves, washed.
    6. 3/4 cup of walnuts

Dressing

    1. 1/2 cup of mayonnaise
    2. 2 Tablespoons of Greek yogurt
    3. 1 Tablespoon of lemon juice
    4. 1 teaspoon of honey
    5. 1/2 teaspoon of salt
    6. 1/4 teaspoon of ground black pepper

Instructions

  1. In a large bowl, mix your dressing ingredients together. (mayonnaise, yogurt, honey, lemon juice, salt and pepper)
  2. Wash and cut up the celery into slices, and core the apples and slice them. Drizzle lemon juice over the apple slices and leave for five minutes, then drain the apples. This way the apples will not brown.
  3. Wash the lettuce and arugula leaves.
  4. Toss all the ingredients, such as the apples, celery and layer the lettuce and arugula leaves on a plate. Add on these leaves the fruit and top with nuts. You can mix in the dressing or serve separate in a small bowl.
  5. Serve chilled for a healthy salad for a lunch or a side dish.
