What is English toffee?
English toffee is a softer buttery shortbread toffee base and is more crunchy, with out nuts.
Baking with shortbread bars or toffee?
I would prefer to make the cookie bar type of snack as it users a shortbread base that tastes like toffee without being hard and like toffee.
Milk or dark cooking chocolate for bars?
It will always depend on what you prefer and your taste. It is most probably healthier to use dark 70 % chocolate for the topping of the bars. But using sweeter milk chocolate is tasty and totally up to you if you have it and will prefer to use it.
Nuts or no nuts what do you prefer?
If you are using nuts then you need to roast them to bring out their flavors. Crush them and sprinkle on top of the warm chocolate. If you do not like to eat nuts on snacks then add some crushed toffee or any candy you prefer. Its all about what you will prefer to eat, make it your own.

How To make Homemade Chocolate Toffee Almond Bars
This is such an easy recipe and using the shortbread dough for a crust does not make the crust hard. But taste like toffee. I great idea.
Preheating your oven and preparing your sheet pans, greasing them and lining them. one for the dough to bake and get another ready to toast the almonds.
In a bowl cream the butter, sugar and the egg yolk, salt and vanilla well. Add the flour and mix well to a soft dough. Then line your sheet pan with this dough and press with your fingers the dough out evenly over the pan. With a spatula flatten it out finely.
Bake this in the oven for about 30 minutes, until starts to brown, then take it out and place the sheet pan with the almonds in the oven to toast for about 15 minutes.
While the almonds toast and the dough is piping hot, add your chocolate squares to the top of the base and leave to melt. Thin chocolate will melt faster. Once it melts spread over the base with a spatula evenly and cover all the base.
Once the almonds have toasted crush them and sprinkle over the hot chocolate and leave them to melt in.
Once all is cool, then slice them into square bars. They should make 24 bars, if measured correctly.
Serve for snacks as a dessert and store for the holidays for treats for the family and kids. A delicious toffee tasting chocolate crushed almond dessert.

Ingredients
- 1 cup of unsalted room temperature butter
- 1 cup of brown sugar
- 1 egg yolk
- 1/4 teaspoon of salt
- 1 teaspoon of vanilla extract
- 2 cups of flour
- 200 grams (7 oz)of dark cooking chocolate or milk chocolate
- 1/2 cup of toasted almonds
Instructions
- Preheat the oven to 175 deg. C (350 deg. F) and grease or spray and cook the sheet pan and then line it with parchment paper and spray and cook that to. This will make it easier for you to remove the bars. You can slice your bars in the pan. Prepare another sheet pan to toast your almond nuts once the bar dough is done.
- Cream in a bowl the butter, brown sugar, egg yolk, vanilla extract, and salt well.
- Mix in the flour until all in combined well into a soft dough.
- Press with your fingers the dough evenly over the sheet pan filling all the area. Then with a spatula flatten it well.
- Place in the oven and bake until starting to go golden for about 25-30 minutes. Depends on your oven. Have your almonds ready to roast in the hot oven once the base comes out.
- Have you chocolate squares ready to place on top of the very hot base so they can melt. Wait until they melted then with a spatula spread the chocolate over the top of the base, as evenly as you can.
- Meanwhile the almonds get toasted in the hot oven for about 15 minutes. Take out and crush.
- Sprinkle the crushed almonds over the warm chocolate to melt in. Leave this to cool before slicing into 24 bars for snacks.
