Homemade Corn and Black Bean Tortillas.
A Tortilla is a very versatile meal that can be made with vegan or vegetarian ingredients and you are able to add meat for the non vegan people as well. Therefore this makes it easy to serve for a family with mixed eating beliefs.
Ingredients
First of all purchase some tortillas or make your own torillas.
Reheat tortillas by wrapping a stack in paper towels and reheating in the microwave. You can also wrap them in foil and reheat them in the oven.
How To
The ingredients for your tortilla is totally up to your taste. But these ideas are all great together.
Corn and black beans or brown beans, depends what you prefer. Chopped onions and tomato and avocado. Bell peppers and other greens of your choice, like lettuce or parsley.
If you have a family eating all together and you have different choices of what you eat then just improvise. Make the basic mix in a bowl and add the other preferred vegan ingredients in a bowl as well. The next bowl is for the meat eaters with your chicken meat or red meats.
These black bean tortillas are one of my favorite things to make for lunch. They are quick, simple, and ready in 10 minutes or less. Make the filling ahead of time, and cook them up throughout the week.

Ingredients
- 1 x tin of Black Beans or brown beans
- 1 x tin of corn (or sweetcorn)
- Two medium tomatoes (sliced or chopped)
- 1 Red onion (chopped)
- 1 x red or yellow bell peppers (sliced or chopped)
- 1 x ripe avocado pear. (chopped pieces)
- salt and pepper
- 10 Pack of tortillas (or make your own)
- Cup full of shredded cooked chicken (from left overs)
- your choice of sauce (tomato, mayonnaise sauce)
- grated cheese
Instructions
- Warm up your ingredients as well as the tortillas. Reheat tortillas by wrapping a stack in paper towels and reheating in the microwave. You can also wrap them in foil and reheat them in the oven.
- Make the different bowls of your mixes. ie; Beans and corn, avocado and tomato and onion, chicken. Cheese. So the family can help themselves and fill in what they prefer to eat.
- Fill the tortilla with your own choice of ingredients, spice and sauce them.
- You can roll the tortillas up like a pancake or open up and have the round tortilla filled with portions of 4 (quarters.) Slit one piece to the center of the tortilla circle and fold each quarter filled with ingredients over the other. End up a triangle. Easier to hole and eat.
Notes
- Make this a versatile family meal, add any other ingredients you prefer. They are totally freezable as well.
Freeze them so they are ready to cook when you need a quick and healthy meal that is absolutely delicious.
