Ingredients

  1. 4 cups mixed nuts
  2. 1/2 cup rolled oats
  3. 1/4 cup honey
  4. 1/4 teaspoon salt
  5. 1 cup dark chocolate chips
  6. 1 tablespoon coconut oil

Instructions

1.    Preheat the oven to 350°F (175°C) and line an 9×9 baking dish with parchment paper.

2.    In a large mixing bowl, combine the mixed nuts, rolled oats, honey, and salt. Stir until everything is well coated and evenly mixed.

3.    Transfer the mixture to the prepared baking dish and press it down firmly to pack it tightly.

4.    Bake for 15 minutes, or until the nuts are lightly golden and the edges start to crisp up.

5.    Remove from the oven and let the mixture cool completely in the baking dish.

6.    While the mixture cools, melt the dark chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth and fully melted.

7.    Once the nut mixture has cooled, cut into 9-12 bars. Dip each bar into the melted chocolate, coating the bottom half of the bar.

8.    Then drizzle the melted chocolate over the top using a spoon or piping bag.

9.    Allow the chocolate to set by placing the dish in the refrigerator for about 15-20 minutes or until the chocolate hardens.

10.  Serve and enjoy your homemade granola bars!
