Ingredients

  1. 900 grams (2 pounds)cabbage
  2. 1/2 carrot
  3. 1/4 apple
  4. 1 1/2 tbsp. dried or fresh cranberries
  5. 23 allspice berries
  6. 3 cloves
  7. 12 bay leaves
  8. 2 lemon wedges
  9. 2 tsp salt
  10. 1 tsp sugar (optional)

Instructions

1. Remove the top leaves and stalk from the cabbage. Thinly slice or shred the cabbage. Place it in a large bowl.

2. Peel the carrots and grate them.

3. Add salt, sugar and carrots to the cabbage and rub everything vigorously with your hands so that the vegetables release juice.

4. Cut the apple into thin slices

5. Place a layer of cabbage and carrots, spices, cranberries and a layer of apples in a clean 1-liter jar. Press firmly. Continue to place layers alternating with each other to the top.

6. Place lemon wedges on top of the jar. They will also act as a weight and add flavor and health benefits.

NB: Cover the jar with gauze (not a tight lid!) and leave in a warm place for 5 days. Open the jar twice a day and release the air that forms during fermentation. To do this, pierce the mass to the bottom of the jar with a skewer or sushi stick in several places. On the 5th day, try the cabbage. If it is sour and pleasant enough, then cover it with a lid and put it in the refrigerator for storage. If not, continue the fermentation process.

Serve the cabbage with olive oil as a salad, add to pickle boards. Sauerkraut can be stewed with sausages, added to soups and stews. Enjoy!
