Crust

  1. 1 1/2 cups all purpose flour
  2. 5 tbsp cornstarch
  3. 1/3 tsp salt
  4. 1/2 cup powdered sugar
  5. 1 cup cold cubed butter

Filling

  1. 3 eggs
  2. 1 cup sugar
  3. 2 lemons
  4. 3 tbsp all purpose flour

Instructions

1. Preheat the oven to 350F. Combine all purpose flour, corn flour, salt, powdered sugar and cubes of butter. It’s convenient to mix everything in a blender. You can also knead the butter and flour into crumbs with your hands.

2. Cover a 9*13 baking dish with foil and place the crumbs in it. Level and make small borders (about 1/2 inch). Bake for 20 minutes in the oven.

3. Zest two lemons and squeeze out the juice. Mix eggs, zest, lemon juice, sugar, all-purpose flour.

4. Mix the ingredients for the filling thoroughly with a whisk so that there are no lumps of flour.

5. Pour the filling into the baking dish and place back in the oven. For a softer filling, bake for 20 minutes; for a denser filling, bake for 30 minutes.

6. Remove the finished lemon bars from the oven and let cool for about 2 hours.

7. After two hours, the lemon bars will become denser and easier to cut.

8. Dust the lemon bars with powdered sugar and cut into squares or rectangular pieces.
