Ingredients

Units Scale
  1. 1 medium watermelon, peeled, de piped and cut into cubes
  2. 3/4 cup of goat feta cheese cubed
  3. a few mint leaves, for garnish.
  4. a handful of lettuce leaves

DRESSING

  1. 2 Tablespoons of organic honey
  2. 2 Tablespoons of lemon or lime juice
  3. 2 Tablespoons of olive oil
  4. salt to taste.

Instructions

  1. In a medium bowl add your dressing ingredients, such as honey, lime, olive oil and salt. Mix them well together and put aside.
  2. In another bowl cut the watermelon into cubes. Add in the feta and gently spoon them to mix.
  3. On a serving dish, layer your lettuce and add the watermelon and feta.
  4. Drizzle over the honey and lime dressing and add the mint leaves.
  5. Serve this cold.

Notes

  • The watermelon should be chilled.
  • Best to make it fresh, as it can become watery.
  • Keep for a day in a sealed container in the fridge.
