Loaded potatoes are oven baked potatoes with skins on. Then the cooked inside scooped out and mixed with ingredients. Filling up potato jackets with this filling. Topped with cheeses and grilled then served. Baked potatoes are normally used in potato dishes with cream and garlic. As well as baking the potato until done to make these loaded potatoes.
Should I pre boil potatoes before baking?
No, not necessary to pre boil the potatoes. The will bake well if you place them on the baking racks and poked with a fork to let out the steam. But if you do want to hurry the process for these baked potatoes. You can pre boil them a little. Not totally, maybe half way. Then continue to bake them oiled or brushed with butter.

How To
Wash and clean the potatoes. Use potatoes that will be soft and fluffy inside when cooked. We will use the oven rack in the middle of the oven to place the potatoes on.
Take the potatoes out and leave on a cooling rack to cool.
When potatoes are cool enough to work with, cut off the top of the potatoes which makes about a third of the potato. Scoop out the flesh of the potato and place it in a bowl. Leave enough of the skin plus some inner potato flesh to fill it with the mixture.
In another bowl add the cream cheese and the sour cream or yogurt and mix it up with a mixer until fluffy and combined.
Fold in the other ingredients such as the cooked bacon bits and chopped chives and two thirds of the grated cheddar cheese. Salt to taste.
With the melted butter, brush the outer skins of the potato. Fill the inside of the potato jackets with the mixture from the bowl. Sprinkle on top the rest of the cheddar cheese.
On a sheet pan place the filled loaded potatoes, set them directly under the grill. On a higher rack. Grill until the potatoes skin are crinkled and the cheese on top has melted. This should not take more than 10 minutes. The inside of the loaded potato should be warm.
Take out and serve for a meal with sides.

Ingredients
- 4 medium potatoes, cleaned.
- 1/2 cup (4 ounces) (115 grams)cream cheese, at room temperature
- 1/2 cup sour cream or yogurt
- 1 cup (8 ounces) (225 Grams) cheddar cheese, shredded, divided use
- 5 strips of bacon, cooked and finely crumbled
- 3 tablespoons finely minced, fresh chives
- salt
- 3 tablespoons butter, melted
Instructions
- Preheat oven to 190 Deg. C (375 Deg. F)
- Wash and clean the potatoes. Use potatoes that will be soft and fluffy inside when cooked. We will use the oven rack in the middle of the oven to place the potatoes on. Rub some oil over the skins.
- Stick the potato with a fork to make a few holes on top to release the steam when baking. Bake the potatoes until they are tender when tested with a knife, and the skin starts to crinkle a little. This should take about an hour. (when they are to crinkled they can be overcooked)
- Take the potatoes out and leave on a cooling rack to cool.
- When potatoes are cool enough to work with, cut off the top of the potatoes which makes about a third of the potato. Scoop out the flesh of the potato and place it in a bowl. Leave enough of the skin plus some inner potato flesh to fill it with the mixture.
- Change the oven to grill and if you using a gas oven switch of the oven and start the grill. Let it preheat for grilling of the loaded potatoes.
- In another bowl add the cream cheese and the sour cream or yogurt and mix it up with a mixer until fluffy and combined.
- Fold in the other ingredients such as the bacon bits and chives and two thirds of the grated cheddar cheese. Salt to taste.
- With the melted butter, brush the outer skins of the potato. Fill the inside of the potato jackets with the mixture from the bowl. Sprinkle on top the rest of the cheddar cheese.
