Ingredients
- 1 Cup flour
- 2 Tsp baking powder
- ½ Tsp cinnamon
- ¼ Tsp nutmeg
- 1 Egg
- 2 Tbsp olive oil
- 3 Tbsp maple syrup
- 1 Cup milk
- Butter for the pan or griddle
Instructions
- In a bowl whisk together the flour, baking powder, cinnamon and nutmeg.
- Add the rest of the ingredients and stir until everything is just incorporated. Let the batter rest for 5 minutes.
- Meanwhile heat a pan or griddle over medium heat. Grease with the butter. Ladle around ¼ Cup pancake batter into the hot pan and cook for 1 ½ minutes or until small bubbles appear on top. With the help of a spatula flip the pancake and cook for 40 seconds more or until done.
Notes
- You can also use honey or agave syrup instead of maple syrup. Same with the oil, feel free to use coconut oil or melted butter
- These pancakes are slightly sweet so you don’t need to serve them with a lot of toppings.
