Mini Apple Rose Tarts recipe. A simple but delicious sweet apple oven baked apple pie or tart for a dessert garnished with castor sugar.

2sheetsfrozen puff pastry1 box of Pepperidge Farm puff pastry
2medium pink or red appleslike pink lady or fuji
juice from half a lemon and water.(1 tablespoon for a cup of water)
1/2 cup of cream cheese
1/2 cup of mixed Cinnamon and castor sugar
2 Tablespoons Castor or powdered sugarfor dusting
Instructions
Preheat oven to 180 Deg. C (350 Deg. F) and grease a muffin pan.
Wash and core the apple. Either with a mandolin slicer or by slicing the apple in half and cutting the core out. Then slice into thin slices as it will be pliable to roll them up in the pastry.
In a bowl add the apple slices and water with the lemon juice and toss up gently so they do not brown. Place them in the microwave for about 1-2 minutes to soften. If you don’t have a microwave add them in a pot with the lemon water and bring to boil on the stove. Boil for about 2-3 minutes. Blanching them only. You do not want to over cook them only to make them pliable to bend when rolled up with the pastry.
Roll out your puff pastry on a board with flour and slice the sheet into about strips of about 2 inches wide.
Spread cream cheese on the pastry strips, then mix the cinnamon and sugar together. Sprinkle some on the cream cheese.
Take your apple slices and layer them on the top half of the pastry so they stick out about half an inch above the pastry strip. Not to far above the pastry strip, as they will burn when baked. They should over flap each other. Leaving the half of the strip to cover the sliced apples when done. Do this to all the apples and the puff pastry.
Now place these rolled puff pastry apples in the greased muffin pans. Sprinkle with a little more cinnamon and sugar on top and in the middle.
Bake them in the oven on the lower rack to prevent the apple from burning. Bake for about 40 minutes until puff pastry is cooked.
Cool on the cooler rack and dust the apple tarts with some castor or powdered sugar before serving for an attractive garnish.
