What is lemon custard made of?
Custards are normally made up of egg yolks, creams, sugar and can be thickened with cornstarch. Adding the flavor you want to it. For this recipe we added lemon for the flavor.
How to tell if lemon tart is set?
When baking lemon tarts or tartlets, fill the crust to at least three quarter full or nearly full. Bake for the required amount of time. Then see if it is firm by testing it still has a little wobble in the center. When cooled it will be more settled.
How do you keep the bottom of a tart from getting soggy?
Pre cook such as blind bake your crusts before you add the filling. Follow the recipe attached for the instructions. Add the crust in a muffin pan for the shape and fill with uncooked rice or other.

- lemon juice
- lemon zest
- sugar
- eggs
- sour cream

Line a baking sheet with parchment or grease the sheet. Line out the pre-made tart shells. Preheat the oven to 190 Deg. C (375 deg. F)
You do not have pre bought crust for these tarts then make them with an Easy Shortbread Crust Pastry . Most delicious pastry crust.
In a medium bowl, combine the lemon juice, zest, sugar, eggs and sour cream. Mix until
combined well.
Transfer the filling to a measuring cup with a pour spout (or similar) and carefully fill
each tart shell just below the top edge.
Bake in the preheated oven for 20-24 minutes or until the filling is set.
Allow to cool.
Top with additional lemon zest to garnish.
