Ingredients

Biscuit crust

  1. 1 packet of coconut biscuits. (graham crackers or tennis biscuits)
  2. 1/2 cup (115 g) of melted butter (unsalted)

Filling

    1. 3/4 cup of whipped full cream, chilled
    2. 125 g of (8 oz) cream cheese, room temperature
    3. 1 can of caramel (tin of boiled condensed milk)
    4. 1/4 cup of powdered sugar or fine sugar
    5. 2 teaspoons of vanilla extract.
    6. 1/2 teaspoon of salt

Instructions

  1. Take out your cream cheese to get to room temperature.
  2. Crush the biscuits fine. Melt the butter and mix all together.
  3. Grease you pie dish with butter or spray and cook. Layer the crushed butter biscuit evenly on the bottom of the dish and the sides. Place in the freezer until needed. To set.
  4. Add your 3/4 cup of full cream to a mixer. Beat on a high speed until thickened and peaks form. Leave aside.
  5. In a clean bowl add your room temperature cream cheese (125 g) and beat on high for about one minute, then add your tin of caramel and 1/4 cup of powdered sugar, 2 teaspoons of vanilla, and 1/2 teaspoon of salt. Mix all until combined.
  6. Pour in the thickened full cream and with a spatula fold the cream mixture into the caramel mixture gently. Until all is combined.
  7. Take out your dish with the biscuit base and pour this caramel cream mixture into the dish. It should be even and then place it in the fridge for at least 6 hours until set or overnight.
  8. The topping can be simple with some piped whipped cream on top. Cut and serve when set.
