Oven Grilled Stuffed Chicken Breasts with cheese and sun dried tomato recipe idea. Easy to create for a lunch or weekday dinner for family.

Ingredients

    1. 4 skinless chicken breasts
    2. 225 grams (8 oz)mozzarella cheese (any melting cheese will do)
    3. 110 grams (4 oz)sun dried tomato (or roma tomato)
    4. salt and pepper
    5. 1 cup of balsamic vinegar (to reduce as a dressing)
    6. bunch of asparagus (enough for four)

Instructions

  1. Firstly rub some olive oil and salt and pepper your chicken boneless breasts. Put aside.
  2. Place the balsamic vinegar in the pan and heat up on a medium heat. Bring this mixture to reduce to 1/3 of a cup from the cup that was required. Should be reduced to a syrup liquid. Place aside and seal it in a bowl. This will be needed for a dressing when you serve the grilled stuffed chicken
  3. Warm up the oven grill. Have the grilling pan ready to place the chicken breast on to grill.
  4. Gently with a sharp knife cut the chicken breast three quarters of the way through. (but not all the way through) Open them up and salt and pepper the inside as well.
  5. Place the sliced mozzarella cheese and the oiled softer sun dried tomatoes inside the sliced chicken pieces. Keep closed with a skewer so that the stuffing does not fall out. Cut the skewer so it just sticks out of the chicken. To prevent it burning while grilling in the oven.
  6. Place the stuffed chicken on the grilling pan under the heated grill in the oven. Leave to grill for about 8-10 minutes until brown. (this time will of course depend on the thickness and sizes of the chicken breasts)
  7. Turn the stuffed chicken over for it to grill on the other side. Also about 8-10 minutes. Some cheese will melt and drip out, but that is fine.
