Ingredients

1. Fillet of steak

2. Butter and oil.

3. Garlic Rosemary and Thyme.

4. Salt and Pepper.

4. Tomato and Lettuce salad

Instructions

  1. Firstly leave the steak out of the refrigerator for at least 10 minutes before you start to cook it. (no frozen meat)
  2. Season the steak well with salt and freshly ground pepper. Roll it in the seasoning, then before you put it in the pan with a little olive oil. season again. (35 % of the seasoning gets lost when cooking)
  3. Place the steak in the pan in a manner that lays away form you. (so no oils splash at you)
  4. Make sure you leave the steak until seared. 3 to 4 minutes a side. On one side there must be color before turning. (no color no flavor)
  5. Then you need to place aromatics in the pan with the steak, such as some butter and garlic and rosemary and thyme. Then scoop and baste the butter and herbs over the steak while it’s searing. Do this just before removing from the pan. Leaving it to caramelize as it adds to the wonderful flavor.
  6. Then take the steak out the pan and leave it on a board to rest for a few minutes. Before plating up with your salad.
  7. A medium rare steak should feel like you taking your pulse. When done.
