A very simple easy casserole potato dish to bake in the oven for meals. Families will love it as a side dish with meats and vegetables. For large gatherings make in bulk and serve. This dish is sometimes called funeral potatoes. Why? Because it is a popular crowd pleasing dish and can be made in bulk. A great side dish served with a meal.
Ingredients
- potatoes
- olive oil
- ranch seasoning mix( Onion powder, onion flakes, dill, parsley, garlic powder, salt, pepper, and dried chives)
- bacon, cooked and chopped
- cheddar cheese, shredded
- sour cream
- fresh parsley, chopped

How To
Preheat your oven and spray cook the casserole dish. (see the recipe attached for the full instructions)
Chop the potatoes to about inch size.
Add the potatoes to a pot of lightly salted water, and boil on high for 10 minutes. Drain the potatoes, and add them to a large bowl. Drizzle olive oil and ranch seasoning (or a season mix as per recipe attached) over the potatoes and gently toss to coat.
Pour potatoes into the casserole dish in an even layer.
While the potatoes are cooking, chop the bacon into small pieces and fry over medium heat, stirring often. Drain on a paper towel lined plate, and set aside.
Add the bacon to the potatoes in the dish.
Transfer the dish to the oven, and bake for 35 minutes, until golden. Remove from the oven, and top with cheese. Return to the oven for 5 minutes to melt the cheese.
Chop the parsley while the cheese is melting. Sprinkle the chopped bacon over the potatoes, then drizzle with sour cream and sprinkle chopped parsley.
Dish up this warm side dish for a meal for lunch or dinner. Eat with vegetables or meats as desired. Great food for large gathering as you can make this in bulk.

Ingredients
- 1 KG (2.5 lbs) potatoes
- 2 tablespoons olive oil
- 1 oz packet ranch seasoning mix or use this mix( Onion powder, onion flakes, dill, parsley, garlic powder, salt, pepper, and dried chives)
- 6 slices bacon, cooked and chopped
- 1 cup sharp cheddar cheese, shredded
- ¼ cup sour cream
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat the oven to 220 deg. C (425 deg. F). Spray a 9×13 inch casserole dish with cooking spray.
- Wash the potatoes, and cut into 1 inch cubes.
- Add the potatoes to a pot of lightly salted water, and boil on high for 10 minutes. (this step will shorten the time the casserole and the potatoes cook in the oven.) Drain the potatoes, and add them to a large bowl.
- Drizzle olive oil and ranch seasoning over the potatoes and gently toss to coat. Pour potatoes into the casserole dish in an even layer.
- While the potatoes are cooking. Chop the bacon into small pieces and fry over medium heat, stirring often. Drain on a paper towel lined plate, and set aside.
- Transfer the dish to the oven, and bake for 35 minutes, until golden. Remove from the oven, and top with cheese. Return to the oven for 5 minutes to melt the cheese.
- Chop the parsley while the cheese is melting.
- Sprinkle the chopped bacon over the potatoes, then drizzle with sour cream and sprinkle chopped parsley.
- Serve hot as a side dish with any meal and enjoy!
