Puff Pastry Spinach and Feta Rolls

How do you defrost puff pastry rolls?
Using the bought packaged puff pastry rolls is easy. They come frozen or chilled. When you need them just unwrap them from the box and plastic packaging. Leave on the counter and they will reach room temperature and are able to unroll easily they are then able to work with.
Should I egg wash puff pastry?
The puff pastry has enough butter or fats to produce a light golden color when cooked. But yes for that extra brown golden color you can egg wash it before cooking. The whisked egg is used also to seal the joins of the puff pastry nicely together.
Ingredients
- fresh spinach
- feta cheese
- salt and garlic cloves
- puff pastry roll
- egg
- sesame seeds

How To
Sauté the crushed garlic until fragrant and then add the fresh spinach leaves to the warm pan. Sauté with a little salt to taste for about three minutes stirring with a spatula.
Leaving the spinach to drain the liquid out in a colander over a bowl. When drained chop the spinach in small pieces and mix with the feta in a bowl. Ready for stuffing the rolls.
On a floured surface roll out the puff pastry sheet. Cut in half length wise.
Add half the filling to one side and roll up when you have brushed the egg wash on the inside of the pastry to seal the roll. Do this with the other side as well.
Cut the rolls into smaller sizes for mini snack bites.
Finally brush the puff pastry sausage roll with egg and sprinkle sesame seeds on top.
Then bake in the oven for about 20-25 minutes until brown.

Ingredients
- 3 cups of fresh spinach
- 1 tablespoon of olive oil
- 1 crushed garlic clove or 1/2 tsp of dried garlic.
- Salt to taste
- 1/2 cup of broken feta cheese
- 1 sheet of puff pastry
- 1 egg
- 1 teaspoon of sesame seeds
Instructions
- Preheat the oven to 200 Deg. C (400 deg. F) and grease baking tray.
- On the stove top heat up a pan or skillet, to medium. Then add the crushed garlic and sauté 1-2 min. until fragrant. Then add the spinach leaves and sauté for about 3-5 min. stirring it, adding salt to taste. Once cooked place in a colander over a bowl. (so the liquid can run out)
- Flour a surface to roll out the puff pastry dough. Cut in half length ways. Roll the one half a little so you could fold the puff pastry over the filling and seal in the mixture well. Do the same with the other half.
- In a bowl mix the feta with the drained chopped spinach well.
- On one side of the puff pastry, paste half of the filling of feta and spinach down length wise. Then with your whisked egg, brush the pastry on the inside next to it (to seal the pastry well) Fold and roll the pastry with the filling over until sealed well with the egg mixture. (should be able to roll the pastry twice.) Brush the pastry sausage roll with egg wash on top. Optional, sprinkle some sesame seeds on top. Cut the long roll into mini snack size rolls.
- Do the same with the other side with the other half of the fillings. (repeat No. 5)
- Place on the greased baking sheets and place in the oven to bake until golden brown. Should take 20 -25 minutes. (puff pastry should all look brown and flaky.)
- Leave to cool on a cooling rack or serve warm with tomato sauce.
