Raspberry Dark Chocolate Truffles
Raspberry flavored dark chocolate truffle balls made to taste. Easily make these truffle balls to keep in the refrigerator in a sealed container for at least a week. Healthy to snack on as both raspberries and dark chocolate that is at least a 70 % cocoa level is very healthy. Two of the best anti-inflammatory compounds to eat to help many inflammation problems.
These truffle balls can be frozen for much longer in a sealed container as well.

Is dark chocolate truffles healthy?
Dark chocolate contains flavanols, naturally occurring antioxidants that have been shown to reduce the risk of cardiovascular disease by lowering LDL cholesterol while raising HDL cholesterol levels. It decreases the incidence of hypertension and stroke, and increases insulin sensitivity.

Butter and full cream is also used as well as some powdered sugar, and cocoa powder to roll them in.
How To
The mixture once done is kept in the fridge overnight or for at least 2 – 3 hours. The mixture should be firm enough to be able to roll the balls out.
Once they are rolled out then roll them in cocoa powder or fine sugar to coat them with.
To keep place them in a sealed container in a fridge. For the nibblers to eat when they have their cravings. Follow the full recipe below.
These balls were of course made in a mold but it isn’t necessary as they can be easily rolled by hand per tablespoon at a time.

Ingredients
- 9 oz (255 g) dark chocolate
- 5 tablespoons of unsalted soft butter
- 3 tablespoons of heavy cream
- 1.2 oz (35 g) Freeze dried raspberries (pulsed freeze dried raspberries in a food processor or a coffee grinder into a powder)
Instructions
- With a small pan simmer the full cream and remove from the stove and add in the softened butter. mix sell. Then add the powdered dried raspberries and stir until all is combined. set aside.
- In a double boiler (or glass bowl over a pot with water) melt the chocolate stirring now and then until melted and you can touch the chocolate temperature (body temp) Do Not heat till 105 Deg F.
- Then gently stir in the cream and butter and raspberry mixture (that should be the same temperature as the melted chocolate) combining them well.
- Leave to cool to room temperature and cover with plastic wrap and store in fridge 2-3 hours.(overnight )While cooling in fridge stir now and again with a fork to prevent the butter fat separating on the top of the mixture. replace back in fridge.
- Scoop out a tablespoon at a time to make round balls. Once they are done then roll them out on some cocoa powder or sugar or dried raspberry powder. Set aside in an airtight container and place back in the refrigerator.
- They will keep for a week that way. Freezing for longer.
