1 Medium ripe watermelon (servings will depend on the size of the watermelon)
1.lime
1 Tablespoon of organic Honey
a sprig of mint leaves
Instructions
Obtain one ripe watermelon, Slice it up and remove the pips. Peel the skin off. Then cube it with and place the watermelon cubes in a plastic container, seal it with the lid and place in the freezer overnight to freeze. About 8 hours or until frozen. Leave out at room temperature for about 5 minutes so the frozen cubes blend easier.
Place in the blender the frozen watermelon cubes and add the juice of the lime, a tablespoon of honey. Blend them lightly so that they are all incorporated. But you do not want to over blend them. It should be a scoopable consistency. Not a liquid.
Scoop out with an ice cream scoop into glasses or dessert jars. Add a piece of watermelon to individual glasses and enjoy on a hot day a slushie for the summer. Insert a rosemary sprig leaf.
