Ingredients

  1. 12 green onions (trimmed and coarsely chopped)
  2. 2 tbsp olive oil
  3. 8 oz cream cheese (softened)
  4. 8 oz sour cream
  5. 1 lemon (zested and juiced)

Instructions

  1. Preheat the oven to 425F
  2. Place the green onions in a shallow baking pan
  3. Drizzle with oil and sprinkle with 1/2 tsp salt and toss to coat
  4. Spread in an even layer and roast for 15-20 minutes
  5. Place the onions in a food processor to finely chop
  6. Transfer to a mixing bowl and add the cream cheese, sour cream, lemon zest, lemon juice, and 1/2 tsp salt
  7. Mix until thoroughly combined
  8. Serve with chips or crackers
